Our Cattle Drive Carnivore Snack Sirloin Sliders are a tender, savory, and rich snack made from thinly sliced Grass Fed & Grass Finished Ground Angus beef Sirloin that has been slow dried to perfection. It is distinct from other types of beef jerky due to the Angus Sirloin cut's higher fat content, which provides a crisp yet buttery, "melt in your mouth" flavor and texture!!
- Sourcing the meat: Sirloin, from the last rib back to the hipbone, extending from the backbone down to the flank. This area is known as the sirloin subprimal, and it includes both the top sirloin, from which more tender steaks are cut, and the bottom sirloin, which yields cuts like the tri-tip.
- Sirloin Location Area: The sirloin is located on the upper rear portion of the cow's back.
- Between Cuts: It sits posterior to the short loin (where T-bone and strip steaks are cut) and anterior to the hipbone.
